You get pretty darn close to my favorite banana muffins. Anyone who knows me knows my love for baking (before I started grad school I went on a personal cake challenge and seriously made one almost every day trying to get the recipes just right). Baking with creative egg substitutes....welcome to life with a severe allergy. I'll continue to document some of the more interesting egg substitutes I create.
